The "Out of Africa" dinner is a very popular one around our kitchen!  We've hosted it twice in the past and keep getting requests to "do it again!"  

This dinner is very personal for me, as I will be showcasing the foods I've grown up eating in Sierra Leone and throughout Africa!  I change up the menu with every new "Out of Africa" dinner I host - and this one promises to be just as exciting as the ones in the past where I let my creative African juices flow to present dishes of my life with a modern approach.

 

MENU

COCKTAIL

“Ginger hibiscus beer" - Light rum syrup steeped with ginger root, dried hibiscus flower, whole cloves and lemon.  Garnished with fresh thyme sprigs. 

CANAPE

"Dukkah Slices" - Egyptian dip of hazelnuts, coriander, cumin and sesame seeds on our rustic sourdough bread slices.  

 

FIRST

"Peppehsoup" shots- Simple vegetable broth with yellow onions, fresh garlic, diced tomatoes, fresh cilantro and chili peppers

SECOND

"Gronsoup" - Crispy white fish topped with “gronsoup” (raw crushed cayenne pepper, fresh lemon juice and zest lemon thyme) and garlic sourdough breadcrumbs

THIRD

Salatu Niebe (Senegalese black-eyed peas)

FOURTH

Ifo Riro (Nigerian - Yoruba style vegetable ragout) with piri-piri Prawns, Chicken Beef seared in palm oil (a deconstructed Sierra Leonean dish)


Dessert:
Apple "Akara" - Spicy vanilla ice-cream scooped over warm apple "akara" (apple chunks added to a fresh bread batter and deep-fried into a light golden crispy fritter)
