"Ode to Summer" Summer Box Reveal

The goodies I collected for our summer box center around two very important things....Mothers and the Earth!  So in full recognition of Mother's Day and Earth Day,  I invite you to a tasting of some of our favorite ingredients in our kitchen!  As usual, we continue to push forth our Eat Clean Live Happy mantra in our simply prepared foods.

UNPACKING YOUR SUMMER BOX:

1. Rose Petal Infused Sugar:  

As you know, we only use pure cane sugar in everything we do.  Your infused rose sugar contains, organic rose buds that have been dehydrated and crushed into the unrefined pure cane sugar.  We then add a scant dusting of our Madagascan vanilla bean powder into the mix.  Try your rose sugar in these following ways:

sprinkled over strawberries

  • Stirred into coffee or tea
  • Use instead of plain sugar when baking cakes, scones etc.
  • Sprinkle over fresh fruit
  • Sprinkle onto desserts, cakes, cookies, muffins
  • Use to make syrups or add to the rim of cocktail glasses or champagne glasses for mimosas and bellinis

2. HK's Sugar Cookie Dough:  

So here's what you're going to do......bake your cookie dough for 12 minutes at 350 degrees F.  Let them cool and then bring them to mom's house!  To be honest, I love my sugar cookies plain as in without any additional sugar icing embellishments (who needs all that sugar anyway?!)  So often times when we make sugar cookies, we simply infuse them with a lot of flavor (i.e. - lemon or almond extract, chai tea leaves, crushed nuts, etc.....you get the idea?!) and omit the sugar icing bit.  In the photographs  below, we made our cookie dough with.....you guessed it - rose infused sugar!      PLEASE KEEP YOUR SUGAR COOKIE DOUGH REFRIGERATED until you're ready to use it.  You can even freeze it and defrost it in the fridge the night before baking them off.

3. HK's Hemp Sauce:

 WARNING:  This savory sauce is good on everything, making it highly addictive.....like crack!  The level of umami that you get from this sauce is mind-blowing!  And it's a vegan sauce too.  We particularly like a light coating of it on roasted asparagus.  But wait...there's more!  It's also a dip on its own or by adding a few tablespoons of mayonnaise to it (try a ½ teaspoonful of hemp sauce to a ¼ cup of mayo).  Serve the dip with cut-up raw veggies like broccoli, cauliflower, or carrots and enjoy!  It's a marinade/rub as well- great on steaks for grilling, chicken for roasting,  or salmon for baking.  But wait....there's still more!! In a small  pot add about one cup of water to your entire jar of sauce (your jar contains approximately 4-ounces of sauce), heat it up and you'll have made a delicious soup! It's the sauce that keeps on giving folks!  PLEASE KEEP YOUR HEMP SAUCE REFRIGERATED UPON OPENING JAR.

4. HK Noot:

 What is "noot"?  It's nutrituional yeast (we like to call it "noot")  Nutritional yeast is an inactive yeast that has a unique flavor similar to cheese when added to foods. It's also a reliable food source of vitamin B12, so if you're vegan, it's a good idea to add some to your food regularly. We've flavored ours with granulated garlic powder, roasted walnuts, our house-made olive oil powder, coarse sea salt and freshly ground black peppercorn.  Again, we're hitting you with complete flavor in this box!  And just like the hemp sauce, our Noot will knock your socks off! It's great on any chip but we like it on spiralized potato chips and sweet potato fries!  But our ultimate favorite is to sprinkle it on popcorn!

5. Organic Yellow Popcorn Kernel:  

We go to a local specialty store to get our organic popcorn kernels.  To get you immediately hooked and started on enjoying our HK Noot, I've packed a small bag of the kernels (approx. a ½ cup) in your box.  If you've never popped popcorn before, it's simple:-

  • Get a large, heavy-bottom pan with a lid
  • Add 1 tablespoon of oil (I use extra virgin olive oil) 
  • Add the kernels and cover the pan
  • Place pan over medium heat, shaking the pan frequently.  Once popping begins, shake constantly and crack the lid to allow steam to escape.  When the popping slows, remove from heat.  Don't uncover the pan just yet!  Wait until popping completely stops.  Then remove the cover, transfer to a large bowl and sprinkle about half a tablespoon of Noot all over the popcorn!  
  • Enjoy.....and thank me later!!!

HK 7-Grain Loaf

6. HK's 7-Grain Mini Loaf:  

This is one of our best-selling house-made breads!  We start by milling our own wheat berries which we procure from Georgia (in house, a few of my favorite whole wheat berries are soft and hard white and red whole wheat berries, emmer wheat and spelt wheat  berries).  I've developed a wonderful blend of some of these berries (30% hard red, 30% emmer and 25% soft white,) and added a 7-grain cereal to the whole wheat berry blend, plus yeast and 15% bread flour, and then formulated the dough to a 65% hydration level to produce a perfect crush that encapsulates a sweet and soft whole grain bread!  To keep it this way as it travels to you, we've wrapped the loaf in one of our custom hand-stamped cotton flour sack towels.

7. Hand-stamped Flour Sack Towels:  

These flour sack towels are quite different from the ones you received in your Spring boxes.  These are commonly used by professionals in the pastry/bakery kitchen.  Nothing kills the consistency and structure of a baked good like moisture.  Moisture fosters, mold, sogginess, shrinkage, etc.  And so to keep baked good fresh but in perfect structure (or consistency), the product will need to be stored in a dry, moisture-free environment or container.  Our 100% cotton flour sack towel does that perfectly, allowing the bread to breathe and retain its structure and freshness.  Once you unwrap your bread for serving, make sure to re-wrap it securely in the towel.  When there's no more bread to be wrapped, use your towel to cover your cookies as they come out of the oven or as you transport them to mom's.  We take our towel use a  step further by using it as a cheesecloth.  When making pasta dough, we dampen it and use it as a cover for the dough.  Place it at the bottom of your bain-marie (water bath) when making a custard.  If you're not about that kind of  bakery life - simply use it as a towel in your kitchen.  You see....the uses are endless!
